Now that it’s September, I’m ready for all things fall-related. This recipe is one of the most requested meals by Brett, and it’s one of the easiest to make — it’s a win-win! Today I’m sharing my easy slow-cooker chili recipe with you. It’s the ultimate cozy comfort meal that requires minimal effort, which makes it even better. What’s better than some chili on a chilly day (see what I did there 😉)?
There are few things worse than finding a recipe I want to try, only to see the ingredient list is a mile long. Thankfully, this recipe isn’t one of them. The secret is to use a packet of taco seasoning, so you don’t have to go out to buy some if you’re missing a specific ingredient or measure out all the spices. This recipe is a slow-cooker chili that doesn’t compromise on flavor. (Also, here’s the exact Crock-Pot we use.)
If you want to prep the night before, you can brown the ground beef, chop the onion and green bell pepper, and store it all in the fridge. Then in the morning, all you have to do is dump everything into the slow cooker. When you get home, dinner will be ready, and your house will smell delicious! No constant stirring is required. Serve with shredded cheddar cheese, sour cream, or with a side of cornbread.
Easy Slow Cooker Chili
Ingredients
- 1 pound ground beef
- 1 onion
- 1 green bell pepper
- 1 (14.5 oz) can diced tomatoes
- 1 (8 oz) can tomato sauce
- 1 (6 oz) can tomato paste
- 1 (16 oz) can red kidney beans
- 1½ cups chicken stock or water
- 1 packet taco seasoning
- shredded cheddar cheese optional
- sour cream optional
Instructions
- In a skillet, brown the ground beef until cooked. Drain grease and place ground beef in slow cooker.
- Chop onion & green bell pepper and add to slow cooker.
- Add diced tomatoes, tomato sauce, tomato paste, red kidney beans, chicken stock/water, and taco seasoning. Stir to combine.
- Cook on low for 6 to 7 hours or high for 3 to 4 hours.
- Serve with desired toppings such as shredded cheddar cheese and sour cream.
