What’s Up Wednesday | January 2022

It’s my first What’s Up Wednesday of 2022. How is January almost over already? I feel like time is flying by faster each year, but I’m excited to see what this year holds. In the meantime, I’m linking up with Sheaffer and Shay, where we share what’s up with us this month.

What we’ve been eating: Did you catch my three quick and easy Vitamix recipes I shared last week, including my roasted cauliflower soup? I have been craving warm and cozy comfort foods like chili, soups, and stews. Also, I recently tried a slow cooker beef stew recipe — I thought it was delicious, but Brett wasn’t a fan.

What I’m reminiscing about: Two years ago, Brett and I went on a sunrise hot balloon ride, and it was an incredible way to start the morning. There is no better way to see the beauty of Phoenix than from above; I highly recommend it to locals and tourists alike.

What I’m loving: I loved my first pair of Ultraboost so much that I recently bought another pair. One of my goals is to get back into daily walks with the dogs. What better motivation than a new pair of sneakers? They’re cute and comfortable, and I love the white version.

What we’ve been up to: My mom came to visit through the beginning of the month (read her trip recap here), and it was so fun to have her here for ten days. Otherwise, it has been a low-key month of getting back into a routine and work.

What I’m dreading: Who doesn’t hate bills? I thought I’d be able to save more this month for the house coming off the holidays, but I completely forgot about my vehicle license tax and car insurance — ugh.

What I’m working on: I’ve been working on my first newsletter and sent it out earlier this week. It took me way longer than I anticipated, but there was a learning curve. If you haven’t, I would love for you to subscribe, so you don’t miss next month’s!

What I’m excited about: It’s not the best picture, but the post-tension rebar is in, and the slab should pour sometime this week. I can’t believe we’re five months in, and it’s so exciting to see things coming together.

What I’m watching/reading: We just started the new season of Ozark. As for what I’m reading, I’m currently reading Mating in Captivity by Esther Perel. Also, I recently shared another book review with some great reads.

What I’m listening to: I’m still going through the Dateline podcast because there are hundreds of episodes. Have any of you heard of Russell Williams? I listened to an episode about him the other day and was surprised I hadn’t heard of him before (warning: deeply unsettling).

What I’m wearing: Please don’t mind my dirty mirror, but I love this Amazon dress. It’s cute, comfy, and flattering, and the quality is excellent for less than $35. It comes in over 30 colors, and I’m thinking about snagging it in a couple more colors.

What I’m doing this weekend: We’re going to an NBA game on Friday night and then to an Italian restaurant on Saturday at 8 pm, which is late for us, but that was the first available reservation, and I booked it weeks ago.

What I’m looking forward to next month: There are quite a few fun things already planned for February. I’m excited to cheer Brett on at his first marathon, and then he surprised me for Christmas by booking a cabin for Valentine’s Day in Flagstaff, something we’ve done the past two years. I didn’t think we’d go this year since he’s running his marathon that Saturday, but I’m excited to keep the tradition alive.

    Oh, the cabin getaway sounds fun! And my least favourite bill is the car and house insurance one. Ugh. So necessary and so not fun.

    I would love to have a hot air balloon ride someday. They look so fun!

  13. I’m so late in reading/commenting, so I hope you have a good mini vacation this weekend. Staying in a cabin is so relaxing. I’m jealous! LOL

    Love the new dress you got, and those sneakers look super comfy. I should really get some new ones soon!
